Jim's Free Fajita Recipe
Fire up the grill, shake Terlingua Jim’s Texas Heat Rub™ over a fine piece of flank steak, and get ready for fajitas packed with smoky flavor and just enough kick. Pile ’em high, pass the fixin’s, and let the good times roll!
Texas Heat Beef Fajitas
Serves 4
Ingredients
- 1½ pounds flank or skirt steak
- 2 tablespoons olive oil, divided
- 1½ tablespoons Terlingua Jim’s Texas Heat Rub™
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- Juice of 1 lime
- Warm flour or corn tortillas
- Optional toppings: cilantro, avocado, salsa and sour cream
Here's how I do it
- Rub the steak with a tablespoon of olive oil, then season it generously with Terlingua Jim's Texas Heat Rub™ for STEAK. Let it sit for 20 to 30 minutes to reflect on what it’s done.
- Get that grill good and hot. Cook the steak for 4 to 6 minutes per side, or until it’s done the way you like it.
- Pull it off and let it rest for 10 minutes. Yes, ten. Leave it alone. You’ve waited this long.
- Toss the peppers and onions with the remaining olive oil, then grill them until tender with a little char.
- Slice the steak thin across the grain and hit it with fresh lime juice.
- Load up those tortillas, add your fixin’s, and get to work.
- That’s all there is to it.
Good beef. Good fire. Good seasoning.
Everything else is just making sure somebody brought enough tortillas.
